    Yoichi, next to Otaru and with a population of approximately 20,000 people, has long been an open town of fishery and fruit trees.

    This is where a rest area and B&B ‘Sawa’ (used for both residential and shop) is located. It was built using materials from a nishin banya, a herring fishermen’s cabin, which used to exist on the coastline of Yoichi.

    Sawa offers buckwheat (or soba) noodle making classes, with the entire shop reserved only for the participants.

    Local fruit grower Mr.Ukai comes here to teach participants how to make soba noodles. We had this shop, Sawa, and try to make soba noodles all by themselves. We saw a Singaporean family of three enjoying the class.

    Kazutoshi Ukai, head of pick-your-own style farm Hyakushoen, left corporate life in 2003 and is now a fruit grower in Niki.

    He started teaching himself how to make handmade soba noodles over 10 years ago, and became a master. Here he is today at Sawa to teach them how to make soba noodles.
